PIZZA TOAST

Pizza toast is a quick and easy lunch idea if you are bored of having sandwiches and fancy something that tastes indulgent but without the calories. This quick lunch idea is actually free on Slimming World if you count the cheese as your healthy extra, plus it’s full of speed like garlic, tomatoes and onion.

PREP TIME: 5 min, COOKING TIME: 5 min, SERVINGS: 2

INGREDIENTS

2 slices of wholemeal bread
1 Onion
1 Tomato
30g Cheddar Cheese
(To make pizza base)
1/2 a tin of chopped tomatoes
1 clove of Garlic
1 tbsp Tomato puree
1 tbsp Parsley

HOW TO MAKE

-To make your pizza base, pour 1/2 a tin of chopped tomatoes, 1tbsp of tomato puree, parsley and 1 crushed garlic into a bowl
-Blitz together with a blender until smooth – add more puree if the mixture is not thick enough
-Use wholemeal bread as your pizza base
-Place bread into toaster and toast on the quickest setting (you only want to toast it slightly)
-Once your bread is slightly toasted then spread your pizza base on top using a spoon
-Then sprinkle your desired amount of cheddar cheese on top (I used 15g per pizza toast)
-Add some thinly sliced onion, sliced tomato and place under the grill until the cheese has melted and crisp on the edges

SYNS per portion: 0 syns if you use your HEB and HEA
