slimming world sweet potato patties



2 Sweet Potatoes
1 half of Broccoli
30g Cheddar Cheese
2 tsp of Cinnamon

PREP TIME: 5 mins, COOKING TIME: 50 mins, SERVINGS: 6 large patties


-Roast 2 sweet potatoes in the oven on 180 for around 35min or until soft
-In the meantime boil a good handful of broccoli for around 10min
-Once Sweet potato is cooked and slightly cooled, cut them in half and scoop out the potato from the skins into a bowl
-Drain broccoli and add to the potato
-Add a handful of grated cheddar cheese and a sprinkle of cinnamon
-Mash together and set aside to cool down
-Once cooled, with your hand, scoop some mash into your palm to form a ball, then lightly press down onto some tin foil to make a patty shape
-Once you’ve used all your mash (should make around 5 – 6 large patties) place under the grill to crisp and flip over in between to grill both sides
-Serve with a crunchy salad
