Slimming world chicken recipe



2 large Chicken breasts (approx. 550g)
1 Green pepper
2 Courgettes
Chestnut Mushrooms
1 Garlic clove
3cm Fresh grated ginger
1 fresh chilli
2tbsp white wine vinegar
1tbsp Olive oil
3tbsp soy sauce
Basmati rice

PREP TIME: 10 mins, COOKING TIME: 25 mins, SERVINGS: 4


-In a hot pan with some fry light, throw in your crushed garlic, grated ginger, and a freshly chopped chilli. let that soften up for a couple of minutes but do not burn

-Add 2tbsp soya sauce and 1tbsp white wine vinegar

-Add the chopped chicken to your sauce and brown off until cooked (around 10-12min)

-Once the chicken is cooked, take out and put to one side

-Meanwhile, pour in 1tbsp olive oil to the pan and add in the chopped mushrooms, onion, brocoli, green peppers and courgette and stir fry on a high heat until softened

-Once crunchy and ready add your chicken into the pan and stir in the remaining 1tbsp soya sauce and 1tbsp white wine vinegar

-Serve on a bed of rice
