EASY SPICY TOMATO PASTA

INGREDIENTS:

1 cup of dried Pasta
1 onion
1 courgette
1 garlic clove
3 cm fresh ginger
1tsp chilli flakes (optional)
500g Passata
2tsp Basil
2tsp parsley
Parmesan (to serve)

PREP TIME: 5 min, COOKING TIME: 1 hour, SERVINGS: 2

HOW TO MAKE:

-Finely Chop up onion and courgette, and place in a large frying pan and fry off with some low calorie cooking spray for approx. 5 minutes (or until softened)
-Grate the ginger and crush the garlic on top and stir in for a further 2 minutes
-Add dried basil, parsley, passata and 1tsp chilli and stir well. Turn down the heat and let simmer for 1 hour (stirring every 15 minutes – add some water if the sauce looks like they are evaporating)
-The last 20 minutes cook your pasta to the desired length of time, strain and add to the sauce mixture and stir well
-Serve in a pasta bowl with a sprinkle of Parmesan (1 tbsp is 1 syn)

SYNS: Syn free (1 syn for 1tbsp of parmesan) which is optional
