FETA AND MINT COUS COUS WITH ROASTED VEG

I found this recipe in the Slimming World ‘best loved extra easy recipes’ book. I needed to take something along to a taster session in group and came across this when looking for some inspiration what to make. I’m not a massive couscous lover but this dish is full of flavour and is absolutely delicious.

INGREDIENTS:
350g dried Couscous
2 Courgettes
1 large Red onion
2 Peppers (1 yellow and 1 red)
2 Garlic cloves
1 tbsp Harissa powder
80g reduced fat Feta cheese
handful of fresh mint

PREP TIME: 7 mins, COOKING TIME: 30 mins, SERVINGS: 4

HOW TO MAKE:

-Chop up onions, peppers and courgettes and mix together in a large roasting tin

-Sprinkle over the garlic and harissa powder

-Spray over some low-calorie cooking spray (I use Fry light) and place in a preheated oven on 200 degrees for around 25 minutes

-Meanwhile, pour 350g of couscous into a heat proof bowl and cover with boiling water (just enough to cover it fully)

-Leave for 10 minutes until the water has completely soaked in then fluff up the grains with a fork

-Add roasted vegetables to the couscous and mix together

-Roughly chop up a handful of mint and add to the couscous, along with some chopped feta
