Slimming world massaman curry



4 chicken breasts
200ml light coconut milk
4tbsp massaman paste
1/2 of lime juice
100ml Chicken stock
Kaffir lime leaves
4 medium-sized Potatoes
1tsp dried chilli flakes (optional)
2 cups of Basmati rice

Slimming world healthy massaman curry recipe

PREP TIME: 5 min, COOKING TIME: 4-5 hours, SERVINGS: 4

-Preheat a hot pan with some low-calorie cooking spray and add massaman paste, coconut milk, lime juice, chicken stock, chilli flakes* and kaffir lime leaves. Mix together and bring to a boil

-Chop potatoes into small cubes and add to the sauce along with diced uncooked chicken

-Transfer into a slow cooker and let it work it’s magic for around 4-5 hours or until chicken is cooked through

-Check intermittently and add more water if needed depending on your desired consistency

-Serve with rice

*FEEDING LITTLE MOUTHS? Ensure you take out kids portions before adding chilli flakes. I also added greek yogurt to make it even more milder for little mouths
