HOMEMADE PESTO

INGREDIENTS:

30g Basil
1/4 cup pine nuts (25g)
1/3 cup Parmesan
1 Garlic
Juice of 1 lemon
1/4 cup olive oil

PREP TIME: 5 min, COOKING TIME: 0 min, SERVINGS: 4-6

Healthy Pesto sauce recipe

HOW TO MAKE:

-Add basil, Parmesan, roughly chopped garlic, pine nuts and lemon zest to a blender and whiz up until you get a smooth paste (pulse instead of blitz if you prefer a thickened pesto)
-Add olive oil and blitz together

It’s so easy to make and tastes so much fresher and stronger than a ready made jar. I decided to make my own as my little one loves pesto and this I knew exactly what is in it. Keep in an air tight pot and can be stored for up to a week.
