SYN FREE CREAMY BROCCOLI SOUP

INGREDIENTS:

1 whole Broccoli
1 Onion
1 Garlic
1 Green pepper
1/2 tsp chilli flakes
handful of fresh Parsley
Water
1tbsp Quark per serving

PREP TIME: 5 min, COOKING TIME: 25 min, SERVINGS: 6-8

HOW TO MAKE:

-In a hot, large sauce pan fry chopped onion, pepper and garlic for a few minutes using low calorie cooking spray (until onion has softened)
-Add broccoli, chilli flakes* and parsley and mix together
-Add a generous amount of hot water (approx. 1.5 liters) and bring to a boil then turn the heat down and let it simmer until the vegetables have softened (approx 25 min)
-Add more water if necessary
-Take off the heat and blitz it all together with a hand blender until it’s a smooth soup texture
-Season with salt and pepper and pour into a bowl
-Add a dollop of quark to each bowl/portion and stir in, it will give it a creamy texture and full of flavour

SYNS: 0

*If you are feeding little mouths, add your chilli flakes at the end with the seasoning and take out their portions just before you add them. Instead of quark, you can add Creme fraiche.
