Slimming World chicken stir fry - Syn free chef


2 Chicken breast
Punnet of chestnut mushrooms
1 Courgette
1 Pepper
1/2 Broccoli
3cm fresh Ginger
2 Garlic cloves
Fresh chilli
3 tbsp Soya sauce
2 tbsp White wine vinegar
2 tbsp Sweet chilli
Dried noodles of choice

-Cut the chicken breast into small chunks and place in a hot large frying pan with low calorie cooking spray

-Add 1tbsp of Soya sauce and 1tbsp of white wine vinegar and cook for around 10-12 minutes until chicken is white and cooked through

-Meanwhile chop up broccoli, mushrooms, pepper, courgette and chilli

-Once the chicken is cooked take it out of the pan and place it to one side, then pour your chopped veg into the hot pan (spray more low calorie cooking spray if needed)

-Grate ginger over the veg and crush in garlic cloves, mix in well with the veg

-Fry veg for a few minutes until slightly softened and add the remaining soya sauce and white wine vinegar, and sweet chilli sauce

-Stir fry for another 5 minutes then add the cooked chicken to the veg and mix in well

-Meanwhile cook noodles (Refer to packet for instructions)

-Once cooked, drain them and add to the stir fry mixture and stir in well

-Add more soya/white wine vinegar if you prefer a more saucy stir fry

(TIP: Tastes even better the next day – cold or hot!)
