INGREDIENTS:
750g Organic Chicken Thighs
1 Onion
Carrots
1 Pepper
2 Courgette
2 Garlic cloves
2tbsp smoked Paprika
1tbsp Oregano
Low sodium chicken stock
PREP TIME: 5 min, COOKING TIME: 60 min, SERVINGS: 4
I absolutely love meal like this, zero effort but maximum flavour. These one pot wonders are brilliant for the whole family, full of goodness and tastes amazing!
HOW TO MAKE:
-Chop up Onion, carrots, pepper, courgette and garlic cloves and place in a large casserole dish
(You can use any vegetables you wish. Cauliflower, mushrooms, tomatoes, broccoli, sweet potatoe etc work really for this!)
-Place your chicken thighs within the chopped veg
-Sprinkle smoked paprika over the chicken and veg, along with a sprinkle of dried herbs (I used oregano)
– Mix up some chicken stock and pour into the casserole dish enough to cover the bottom (around 200ml)
-Season well with salt and pepper
-Place in a preheated oven on 200 for around 60 minutes or until chicken is cooked through
