INGREDIENTS:
Tin of peeled potatoes
4 large eggs
Parsley to serve
Dried chilli flakes (optional)
PREP TIME: 1 minute, COOKING TIME: 12 minutes, SERVINGS: 2
HOW TO MAKE:
-Drain the tinned potatoes and slice them up and fry up in a large frying pan with low calorie cooking spray or olive oil
-Cook for around 10 min, until crispy and golden (spray more cooking spray if needed) and tossing them so all sides get crispy
-crack in the eggs and stir in well so all the potatoes are covered
-Turn off the heat and continue to stir round gently with a wooden spoon until the egg is cooked and scrambled
-Serve in a bowl, season with salt and pepper and add a sprinkle of fresh parsley (And chilli flakes if you like a bit of heat)
TIP: Add in some spinach for extra veggie power!
