Slimming World pesto pasta

BACON AND MUSHROOM PESTO PASTA

 

INGREDIENTS:

8 Rashers of smoked bacon
250g Chestnut mushrooms
4tbsp reduced fat pesto or my homemade pesto
2.5 cups of wholemeal pasta

PREP TIME: 2min, COOKING TIME: 15min, SERVINGS: 4

HOW TO MAKE:

-In a large saucepan with boiling water, cook the pasta until soft (or to your desired taste) I cook it for around 10 minutes

-Meanwhile, chop up bacon rashers into pieces making sure you cut off all the visible fat

-Chop up the mushrooms and add them (along with the bacon) to a hot frying pan using low calorie cooking spray – fry until cooked and crispy

-Stir in 2tbsp of pesto and mix well with the mushrooms and bacon

-Drain pasta and add it to the mix – stir well

-Finally add the other 2tbsp of pesto and mix all together and serve immediately

OPTIONS:

-Grated light halloumi goes well sprinkled on top
