Slimming World spaghetti and meatballs recipe

SPAGHETTI AND MEATBALLS

INGREDIENTS:

Meatballs
Spaghetti
(To make sauce)
500g Passata
1 Onion
2 Garlic cloves
Handful of chopped Parsley
1 tbsp dried Oregano
300ml Chicken stock
2 tbsp Tomato puree

PREP TIME: 5 min, COOKING TIME: 60 min, SERVINGS: 3-4

Slimming World spaghetti and meatballs

HOW TO MAKE:

-In a large frying pan, chop and brown off the onion using low calorie cooking spray (for around 3-4 min)

-Add crushed garlic and fry-off for a further 1min

-Add passata, parsley, oregano, puree and chicken stock and mix together. Bring to a boil and then turn the heat down and let simmer for around 1 hour (TIP: The longer you leave the sauce to simmer, the darker the colour which means the more flavour you get)

-Check on sauce every 10-15min adding a little bit of water each time

-Meanwhile, fry off your meat balls. I bought these meat balls but if you would prefer to make them yourself you can find my recipe here. Use a shallow frying pan and a small amount of oil (TIP: I use an oil spray because you use a lot less oil and distributes evenly when you spray the pan!)

-Fry off until they are cooked and nice and brown, approx. around 8-10min. Once cooked transfer them into your tomato base and stir in well to coat them

-Cook your spaghetti to your desired taste and serve! I drain and stir my spaghetti into the sauce, but you can also serve the spaghetti onto a plate then pour your sauce on top
