Handful of spinach
2 tbsp paprika
1tbsp Olive oil
400g butter beans
PREP TIME: 5 min, COOKING TIME: 1 hour, SERVINGS: 4
HOW TO MAKE:
-Chop up onion and fry off in a large frying pan with olive oil until softened, approx. 4min
-Crush in garlic and stir in for a further 2 min
-Add paprika and 2 cans of chopped tomatoes and stir. Turn the heat down and let simmer for around 45 – 60min stirring occasionally. Adding splashes of water along the way if the sauce gets too thick
-Drain butter beans and add to the sauce half way through (NOTE: I use pre-cooked butter beans either in a jar or a can)
-In the last 5 minutes wash and add a handful of spinach and serve in immediately once spinach has wilted
-Serve with some olives and some crusty bread!
A great veggie meal with filling power, and so easy to make!
