slimming world spanish chicken tagliatelle



2 Large chicken breast
2 garlic cloves
1 large onion
1 Courgette
1 red pepper
500g Passata
1 tbsp Tomato puree
200ml chicken stock
2 tbsp Basil

PREP TIME: 10 min, COOKING TIME: 1 hr 20 min, SERVINGS: 4


-Chop up onion, courgette and garlic into a large pan and fry off for approx. 4-5 min or until softened

-Add 1tbsp of basil, passata, tomato puree, 200ml chicken stock and stir and bring to a boil

-Take off the heat and let it cool down a little. Then with a hand blender, blend the mixture together to a smooth (soup like) texture

-Put back on a low heat and add the remaining basil. let it simmer for around 1 hour

-Dice the chicken breast and chop up the pepper and fry off in another pan until the chicken is cooked through, around 10-12min

-Once cooked add the chicken and pepper to the sauce and mix in well

-Cook tagliatelle to desired taste and serve with the chicken mixture on top

(NOTE: The longer you leave the sauce to simmer, the better it tastes! That goes for all tomato based dishes)
