healthy roasted vegtables with couscous

STIR-FRY VEG COUSCOUS WITH LEFTOVER CHICKEN

INGREDIENTS:

1 Red onion
Handful of mushrooms
1 Pepper
1 Courgette
Cup of dried couscous
1 tbsp Harissa powder
1 tbsp Paprika
1 tsp dried chilli flakes
Chicken to serve

PREP TIME: 5 min, COOKING TIME: 15 minutes, SERVINGS: 4

HOW TO MAKE:

– Add boiling water to the couscous (enough just to cover it) and set to one side and let it soak up the water

-Meanwhile in a hot pan with a little olive oil, fry off chopped onion, mushrooms, pepper and courgette until soft and cooked through (Approx. 10 min)

-Add in half of the Paprika and Harissa powder and mix well and make sure the vegetables are well coated

-Return back to the couscous and fluff up with a fork to make sure all water has been absorbed

-Add couscous to the pan of vegetables and add the remaining paprika, harissa powder and chilli flakes (optional)

-Mix all together and serve in large bowl and top with leftover roast chicken
