SCRAMBLED EGG AND VEG PITTA POCKETS

INGREDIENTS:

Wholemeal Pitta
2 eggs
Half a pepper
Handful of spinach
A little sprinkle of cheddar cheese

PREP TIME: 2 min, COOKING TIME: 5 min, SERVINGS: 1

HOW TO MAKE:

-Add a little olive oil or low cal cooking spray to a pan and throw in some chopped pepper and fry off for a couple of minutes

-Add a handful of washed spinach and let it wilt down

-Crack in 2 eggs and stir in with a wooden spoon (You do not have to beat them first)

-Meanwhile, pop your pitta into the toaster

-Turn the heat down low on your pan and stir until the egg is scrambled and the pepper and spinach is coated, add a little salt and pepper

-Add a little grated cheese and remove from the heat

-When your pitta has popped up, slice in half and spoon in your mix
