Healthy syn free meal

ORZO WITH CHICKEN AND CHORIZO

INGREDIENTS:

1kg chicken legs or thighs
250g orzo
500g chicken stock
10cm chorizo
1 onion
1 red pepper
2 garlic
Baby plum tomatoes halved
Black pitted olives
Olive oil 3tbsp
Fresh basil
Dried oregano

PREP TIME: 5 min, COOKING TIME: 45 min, SERVINGS: 4

HOW TO MAKE:

-In a hot pan, fry off the chicken with olive oil or low cal cooking spray. Cook over a medium heat (if the pan is too hot then the chicken will burn). Once cooked take it out of the pan and place to one side (Make sure it’s cooked through)

-Chop up and add to the pan onion, pepper, garlic, chorizo, Tomatoes, olives and oregano. Fry until softened (around 5 – 7 min) Add more oil/spray if needed

-Add the orzo to the pan and pour over the chicken stock. Bring to a boil and stir. Then turn the heat down and simmer with the lid on. Simmer until the orzo is cooked through to your liking (I simmered mine for around 30 min) Adding more water if needed

-Once your orzo is cooked through and has soaked up all the stock, add the chicken on top with a sprinkle of chopped basil and serve immediately
