healthy meals


1/2 Chorizo
1 Red onion
1 Garlic clove
1tsp chilli flakes (optional)
Small glass of red wine
400g chopped tomatoes
1tbsp tomato puree
Handful of spinach
Splash of olive oil

PREP: 5min, COOKING TIME: 40min, SERVINGS: 2 – 4 servings


-Cut the chorizo into small chunks and fry off in a hot pan with a little olive oil (or low cal cooking spray) only for a few minutes

-Then add chopped onion and crushed garlic to the pan, add a little more olive oil if needed. With a wooden spoon mix well and fry off until the onions have softened

-Add in a glass of red wine, chopped tomatoes, tomato puree, chilli flakes and stir. (add a little water if needed) Bring to a boil then turn the heat down low and simmer for around 25-30 minutes

-In the last 10 minutes boil tagliatelle to desired taste. Meanwhile, wash and add spinach to your base and wait until it has wilted

-Drain and add tagliatelle to the base and serve immediately
