Brown rice patties - Arbonne 30 days to healthy living

If like me, and always overestimate your rice portion (guilty every time) here’s a great way of using up the leftovers.


1 cup of cooked brown rice
Half a chopped onion
1 clove of garlic
1tsp ginger
Large handful of spinach
1/2 tsp cinnamon
1 egg

PREP TIME: 4 min, COOKING TIME: 8 min, SERVINGS: Makes 4 to 5 patties

-Place all ingredients into a blender and blitz. I prefer to pulkse mine so the consistency is a little textured

-If the mixture is too wet then place in the fridge for 30 minutes

-Scoop some mixture into your hand to create a ball, then place into a heated non-stick frying with olive oil. Press down slighty to create a patty shape, and repeat until you have used all the mixture

-Brown off one side for a few minutes (approx. 4 mins) then flip over to brown the other side (you only need to flip them once)

-Serve with a side salad
