SPINACH AND SCRAMBLED EGG

My ‘go to’ and very easy lunch recipe. So satisfying and super quick to make. This really is a no fuss, no thrills but really tasty meal and it’s great for breakfast or lunch.

INGREDIENTS:

3 free range eggs
Large handful of spinach
Salt and Pepper
Small splash of oil

PREP TIME: 1 min, COOKING TIME: 4-5 min, SERVINGS: 1

HOW TO MAKE:

-In a large frying pan, pour in a small amount of oil (I prefer Olive oil or sesame oil)

-Then wash your spinach and drop into the pan. give it a couple of minutes for it to wilt

-Crack open your eggs and pour straight into the pan (no need to whisk them first)

-Add some salt and pepper and stir in with a wooden spoon. Make sure the yolks have broken but don’t over stir the eggs as it will turn into an omelette

-Stir slowly, and fold gently as the eggs are cooking through

Serve immediately (add a sprinkle of chilli flakes if you like a little heat)
