Healthy African inspired chicken stew - Arbonne 30 days to healthy living

AFRICAN INSPIRED CHICKEN STEW

This chicken stew was divine. The almond butter really gives it a nutty taste and its full of flavour. Another great chicken dish to add to the recipe book!

INGREDIENTS:

2 large chicken breast
1 medium onion
1 inch ginger
3 cloves of garlic
Handful of mushrooms
1 tin of chopped tomatoes
250ml water
1 tsp cayenne pepper
1 tsp cumin
1 chilli (optional – if you like it hot)
2 tsp coriander
1/4 Almond butter
Chopped parsley for garnish
1 cup brown rice (for 2 people – 2 cups for 4 people)
1 tbsp coconut oil

PREP TIME: 10 min, COOKING TIME: 30 min, SERVINGS: 4

HOW TO MAKE:

-Chop chicken breast into large chunks and fry off in a hot pan with coconut oil until cooked (approx. 10-12min)

-Once cooked then place it to one side. Then in the same pan, add chopped onion, mushrooms, ginger and garlic, and cook until onions have gone soft and translucent (add more coconut if needed)

-Add cayenne pepper, cumin, coriander, chopped tomatoes, water and almond butter, and mix all together

-Add your cooked chicken to the stew and let simmer on a low-medium heat for 10 minutes (or until water has evaporated and looks like a stew consistency)

-Serve with brown rice and garnish with parsley

HOW TO MAKE BROWN RICE:

Brown rice takes a lot longer to cook than white rice. It will take around 35 mins so always start with the rice.

-Add your cup(s) of rice to a pan and cover with cold water by a couple of centimeters

-Place on the hob on a high heat and bring to a boil

-Once it is at boiling point, turn the heat down and place a lid over the pan, and let it simmer for around 35 min
