ROASTED VEG TRAY BAKE

This is a super easy way of jazzing up boring vegetables, and it really works with any vegetable, whatever you have lying around in the fridge. Cauliflower, courgette, bell peppers, literally anything! The beauty of this tray bake is not only is it super healthy and you can really bulk your plate out with this, but it also goes with anything! serve with a piece of fish or meat, or mix in some rice!

INGREDIENTS:

2 medium-sized sweet potatoes
1 white onion
Handful of Sprouts
Handful of green beans
2 large carrots
2 Cloves of garlic
2 tsp Coconut oil
Drizzle of olive oil (optional)

PREP TIME: 5 min, COOKING TIME: 30 min, SERVINGS: 2-3

HOW TO MAKE:

-Pre-heat oven on around 200 degrees

-On a large baking tray, spoon on your coconut oil and place in the oven for a minute or 2 until the coconut oil has melted

-Prepare and chop up all your chosen veg (TIP: If you are using sweet potato, just wash and cut up into small chunks leaving the skin on. It will help to Crispen up, plus the skin holds so much goodness and nutrients it would be a shame to waste)

-Tip your veg onto the baking tray and spread out evenly

-With a garlic crusher, crush the garlic over the veg and season well with salt and pepper

-Add a little drizzle of olive oil over the top and place in the oven. Cook for around 30 minutes, but check half way through and give them a little toss so they don’t stick to the bottom
