Roasted veg and chickpeas with cous cous - Healthy slimming world

ROASTED VEG AND CHICKPEA COUSCOUS

The great thing about this dish is it works as a side with a piece of meat or fish, on its own, or even cold the next day for your lunch. It’s full of flavour and full of goodness. Anything with Harissa powder/paste is a winner in my books, I love the smokey taste!

INGREDIENTS:

1 Cup of dried Couscous
Can of Chickpeas (drained)
1 Red onion
1 yellow Pepper
1 tbsp Harissa powder
2 tsp parsley
1 tsp coconut oil

PREP TIME: 5 min, COOKING TIME: 30 min, SERVINGS: 2 – 4

HOW TO MAKE:

-Roughly chop the onion and pepper and place in a large bowl

-Drain the chickpeas and pour them into the bowl and add harissa powder and parsley. Season well with salt and pepper

-With a large spoon mix the veg well so it’s all coated with the harissa powder and place onto a flat roasting tin, spreading the mixture out evenly

-Add a little coconut oil and roast in an pre-heated oven on 200 for around 25-30min

-In the last 5 minutes, pour boiling water over your couscous in a large dish, making sure it’s all covered. Wait for the cous cous to soak up all the water and fluff up with a fork

-Add the couscous to the roasted veg and mix well. Add more harissa powder if needed
