HEALTHY CHICKEN FAJITAS

INGREDIENTS:

300g Chicken breast
1 Red pepper
1 Green Pepper
1 Onion
2 tbsp Fajita seasoning (I use Schwartz)
1/2 tsp Dried chilli flakes (optional)
200g chopped tomatoes
Wholemeal or Weight Watchers wraps
jalapenos (to serve)
0% Fat free Greek yogurt (to serve)
Cheddar cheese (Optional to serve)
Coconut oil or low calorie cooking spray

PREP TIME: 5 min, COOKING TIME: 20 min, SERVINGS: 2 – 3

HOW TO MAKE:

-Thinly chop up peppers and onion, and in a large hot frying pan with coconut oil, stir fry the chopped veg for approx. 5 minutes, until sauteed and the onion is soft, then put to one side

-Chop up the chicken breast into strips and in the same pan, add a little more oil (if needed) and cook through the chicken on a medium heat (Approx. 10-12 min)

-Once the chicken is cooked through, toss in the cooked vegetables and mix

-Add half a tin of chopped tomatoes, chilli flakes and fajita seasoning, mix well until coated

-Leave over a low heat for the flavours to marinade while you heat up wraps. I heat mine 2 at a time in the microwave, full power for around 10-15 secs – that’s it!

-Serve with some grated cheese, Greek Yogurt and jalapenos
